Water temperature

The base temperature is 54 to 58 °C (193 to 200 °F): flour, room and water added together.

Method

Mix

  1. Set the water temperature from a base temperature of 54 to 58 °C (193 to 200 °F), then dissolve the yeast in it.
  2. Add the flours, the fermented dough (pâte fermentée, dough kept back from an earlier batch), the herbes de Provence and the salt.
  3. Mix with the dough hook on low speed for 3 minutes, then on medium speed for 6 minutes.
  4. At the end of the medium-speed mix, add the extra water (bassinage: water held back until the end).
  5. Right after the water, still on medium speed, add the olive oil and mix until it is absorbed.
  6. Drain and quarter the olives, then mix them in on low speed.
  7. The dough should come off the mixer at 24 °C (75 °F).

First proof

  1. Leave the dough at room temperature for 1 hour.

Shape

  1. Divide the dough into 370 g pieces.
  2. Pre-shape each piece loosely into an oval and let rest for 15 minutes.
  3. Shape the pieces.

Second proof

  1. Proof for about 1 hour at 24 °C (75 °F).

Bake

  1. Set the pieces on parchment paper and bake them directly on the deck of a deck oven, with no sheet pan, for 10 to 12 minutes at 250 °C (475 °F).
